Ingredients:
- 1 (3 lb.) bone in turkey breast, skin removed
- 1 Tbs. olive oil 2 garlic cloves, crushed
- 1tsp. finely chopped fresh sage
- 1 tsp. finely chopped fresh thyme
- 1 tsp. finely chopped fresh rosemary
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
Directions:
1.Preheat the oven to 375.
2. Rinse the turkey breast and pat dry.
3. In a small bowl, combine the oil, garlic, herbs, salt and pepper and rub over the turkey breast.
4. Transfer the turkey breast to a roasting pan and roast until the juices run clear when cut and a thermometer registers 165 (about 1 to 1 1/4 hours).
5. Let rest, covered with aluminum foil, for 10 minutes before carving.
**Chefs note: if you can’t buy fresh herbs, you can substitute dried instead. Just use half of what you’d use fresh.
