Everyone needs a great curried chicken salad Recipe in their repertoire. This one is my favorite! Scoop it onto a salad for lunch or make a sandwich and pack it up for a picnic. Any way you serve it, you are in for a treat!
Ingredients:
- 1/4 cup of coconut milk
- 1 tablespoon cup of curry powder
- 1/4 cup of cilantro
- Coconut oil for cooking
- Salad lettuce
- 1 chicken breast
- 1/4 onion
- 1/2 red bell pepper
- 1/2 cucumber
- 1/2 tablespoon of almonds
Directions:
- Dice the onion and chicken into bite sized pieces
2. Coat a frying pan in 1/2 tablespoon of coconut oil
3. Add in chicken and onions; cook on medium heat
4. After chicken and onions are fully cooked, place them in a bowl
5. In this bowl, add the additional ingredients and mix well
6. Plate on top of salad leaves and enjoy
