This dairy-free beef curry recipe from my AHeathierU app will quickly become a family favourite. Packed full of delicious flavours, high in iron, and guaranteed to add warmth to any lunch or dinner.
Ingredients:
- 4 oz of beef (your preference; suggested: beef round or boneless short ribs)
- 1/4 an onion, diced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of ground turmeric
- 1/2 teaspoon of cardamom
- 1/4 cup of coconut milk
- 1/2 bell pepper diced
- 3 mushrooms
- 1/2 teaspoon of grated ginger
- 1/2 clove of garlic
- 1/4 cup of basil
- Salt to taste
- 1 tablespoon of coconut oil to cook
Directions:
- In a pan, cook the beef and onions in the coconut oil on medium hear for about 5 minutes until brown
2. Add the spices, coconut milk, and vegetables
3. Bring to a boil and simmer until beef is tender (about an hour or less)
4. Add the basil, garlic, ginger and salt and let simmer for an additional 10 minutes
