Cucumber Salad, Sweet Japanese Style

A delicious light summer salad, makes 1 serving (vegetable) excellent for the losing phase of my intermittent fasting program.

Ingredients:
1 cup cucumber sliced/diced
2 tbsp apple cider vinegar
1 tbsp fresh lemon juice
1 tbsp Bragg’s Liquid Aminos
1 tsp finely minced onion
Cayenne pepper to taste
Stevia to taste

Directions: Mix ingredients together, marinate for 15 minutes or more and serve chilled.
