Ingredients:
Cilantro Lime Chicken:
- 2 chicken breasts
- ¼ cup lime juice
- 1 tablespoons olive oil
- ¼ cup fresh cilantro
- A dash salt
Avocado Salsa:
- 2 diced avocados
- 1/4 cup fresh chopped cilantro
- 2 tablespoons lime juice
- ½ tablespoon red wine vinegar
- 1/2 clove of garlic, minced
- Salt to taste
Directions:
1.) For the marinade: add lime juice, olive oil, cilantro, and dash of salt.
2.) Add chicken to the marinade and let soak for 15 minutes
3.) Preheat grill to 400 degrees.
4.) Grill each side of the chicken for about 5 minutes, until chicken is fully cooked. Plate and set aside.
5.) To make the avocado salsa: add avocado, 1/4 cup fresh cilantro, lime juice, red wine vinegar, red pepper flakes, garlic clove, and salt to a small bowl. Mix well.
