Juicy chicken marinated in a flavorful blend of herbs and spices, skewered with colorful veggies for the ultimate BBQ delight. Itβs the perfect dish to kick off your summer celebrations with family and friends!
These make for a great long weekend treat and is one of our favourites for the BBQ on the back deck. A great meal while on an intermittent fasting diet and one of hundreds that are included on my online aps for my clients.
This Chicken Kabob recipe is sure to be a hit at all your BBQ gatherings
Ingredients:
- 1 lb of chicken breast, cubed
- 1 onion
- 2 bell peppers
- 1 zucchini
- 1 head of garlic
- 2 teaspoons salt
- 1/4 cup of fresh lemon juice
- 1.5 cup of olive oil
Directions:
1. Blend garlic cloves, 1 teaspoon of salt, half of the lemon juice, and 1/2 cup of the olive oil together to make garlic sauce. Slow the blender down and drizzle in the rest of the lemon juice and another 1/2 cup of olive oil. The consistency should end up being somewhat like mayo.
2. Put garlic sauce in two bowls and set one aside, this will be your dipping sauce
3. In one of the bowls add in the rest of the olive oil and some salt (1 teaspoon), this will be your marinade
4. Cube the chicken and vegetables into a size that will fit onto your skewer
5. Coat ingredients in the garlic marinade
6. Wet the skewers slightly so they do not burn
7. Assemble the kabobs and place them on the grill at high heat until chicken is cooked all the way through
8. Plate and enjoy with garlic dipping sauce
