I love this luscious and juicy summery salad recipe from my app AHealthierU.

And plus…if you wanted to make this a main dish, simply add in some grilled or rotisserie chicken. Enjoy!
Ingredients:
- 1/4 cups cooked quinoa
- 1/4 cups fresh or thawed frozen corn
- 1/3 medium avocados, diced
- 1/4 cup cherry tomatoes, halved
- 1/8 cup red onion, diced small
- 1 tablespoon chopped fresh cilantro
- Zest of 1/2 lime and 1 tablespoons fresh lime juice
- 1 tablespoon olive oil
- Sea salt, to taste
- Pepper
Directions:
1. For the dressing, mix olive oil and lime juice together with salt and pepper
2. Combine everything ingredients together in a bowl and pour dressing over
