A 15 Minute Cauliflower Chicken Fried Rice that’s low carb, high protein and flipping delicious!
Even people who don’t like cauliflower will be amazed at how yummy this version of chicken fried rice tastes!! Easy, ready in 15 minutes, and so much healthier than calling for takeout!!. It’s the perfect quick & easy dinner recipe.
Ingredients:
- 4 flowerets of cauliflower
- 1 teaspoon freshly grated ginger
- 1 large egg
- 1 jalepeño, diced
- 1 clove of garlic, minced
- 1 (4 oz.) chicken breast, shredded
- Coconut oil for cooking (about 2.5 Tbs)
- Tablespoon of tamari soy sauce
- 1/4 cup cilantro
Directions:
1.) Place the flowerets in a food processor
2.) Pour processed cauliflower into pan and cook with coconut oil on medium heat
3.) In a second pan scramble the egg, using coconut oil to coat the pan
4.) Add scrambled eggs to processed cauliflower
5.) Next, add your shredded chicken
6.) Now include the minced garlic, diced jalepeño and ground ginger to the mixture
7.) Coat in soy sauce and garnish with cilantro
